There are two reasons for dyeing  pistachios red:

The first reason is  that there was a Syrian importer called Zallum who dyed pistachios red to distinguish it from competing importers.

The second and most likely reason is that the producers used to dye the pistachios in a red color in order to hide the defects and spots that were found on the peels  of pistachiosas a result of using old methods of harvesting.
